Sculpted Decorations

Intricate designs in many styles with flowers, leaves, shells, or abstract
shapes sculpted in marzipan, sugar paste or chocolate create breath-taking realism or inspiring fantasy. Sculpted elements can be applied to any iced cake
and combined with other techniques for a wide variety of effects.

Hilary and Ken's Cake

Chocolate buttermilk cake layered with meringue buttercream flavored with orange curd
and chopped candied oranges. Rolled fondant flavored with orange blossom water
and painted with flowers derived from an Art Nouveau vase.
The top tier was inspired by a pillar at an entry to Prospect Park in Brooklyn.

Double chocolate buttermilk cake with banana filling and rolled fondant flavored with almond.
The stylized fruit and leaf appliques are covered with 24 karat-gold leaf.
The decoration is loosely inspired by an Art Nouveau vase.

Lemon butter cake with fresh strawberry filling and vanilla mouselline buttercream.
The lemons and leaves are scultpted of marzipan.
A wallpaper design by William Morris gave the inspiration for this cake.


Purva's Cake

Purva's cake
Golden butter cake with lemon curd and French vanilla buttercream. To match an
embroidered South Asian wedding costume, it is covered with pink rolled fondant
and fondant appliqués and embellished with royal icing.
The roses are sculpted in white chocolate plastique.

Hazelnut chocolate sponge cake with Fangelico-flavored syrup
and chocolate buttercream. The floral pattern painted on the vanilla-flavored
rolled fondant and the sculpted sugar paste flowers on top were
chosen to complement the bride's flowers.

Coconut cake with raspberry preserves, and raspberry buttercream.
In a design suggested by an embroidered silk handbag, the green rolled fondant
is brushed with yellow luster dust and painted with food colors.
The topiary and applied flowers are made of sugar paste.

Inspired by the late Jazz series by Henri Matisse,
this chocolate buttermilk cake with raspberry preserves and raspberry buttercream
is covered with rolled fondant and sugarpaste cut-out appliqués.

Chocolate buttermilk cake with orange buttercream.
Yellow rolled fondant brushed with gold luster dust and painted to recall the carved
relief of the balconies at Carnegie Hall. Chocolate plastique poppies
imitate the red velvet of the Hall's seats.

Pear pound cake with framboise syrup and stabilized raspberry whipped cream,
covered with rolled chocolate fondant and sugarpaste dogwood blossoms.


Kristine and Juliet's Cake

Kristine and Juliet's cake
Hazelnut cake filled with espresso buttercream, and chocolate cake filled
with lemon curd. Both covered in lemon buttercream.
Decorated with figures made of tinted confectioner's chocolate.
